An initial screening test verifies employee understanding of the five main sections of the 1999 FDA Food Code: transmission of disease, hand washing and personal hygiene, safe cooking and cooling techniques, cross-contamination, and storage and cleanup. For those topic areas in which the user needs improvement, video testimonials and animated demonstrations present the necessary information. For the final test, users view a dramatization of two deli workers preparing food and making occasional mistakes.
